Vesper Martini

The famed “James Bond Martini”, but with St. Johnsbury Distillery’s Artisanal Spirits! Both our Vermont Vodka & St. Johnsbury Gin, Lillet Blanc, & Orange Bitters. 007 would have it “Shaken, not stirred” but we can do it however you’d like!

Mai Tai $15 - $11
One of the most recognized “tiki drinks” in the world, this tasty tropical treat was first created in 1944 by “Trader Vic”, in the bay area of Cali. The name derives from the Tahitian word maita’i which means “the best” or “out of this world”- and with our handcrafted rums used in the recipe, we couldn’t agree more! Our variation uses a base of both our Pirate Dan’s Vermont Rum and Backwoods Reserve Aged Rum, along with fresh lime, Cointreau, orgeat (almond) syrup, and finished a float of our Dark Maple Rum & Luxardo cherry juice.
Notes: Rich, balanced sour & sweet, rum forward, complex
Hummingway

While spending some time in Cuba, Ernest Hemmingway was famed for ordering his daiquiris in a particular way- twice the amount of rum and with the addition of both grapefruit and Luxardo, which is an Italian maraschino liqueur; hence was born the Hemmingway Daiquiri. For a fun riff on this drink we’re using a split base with our Elderflower Rum and Pirate Dan’s Vermont Rum (twice the rum!), fresh squeezed grapefruit juice, lime, Luxardo, and cranberry bitters.
Notes: Sour, bright, botanical, floral
Al Capone - $14 - $10
Being one of the most famous gangsters in the world, we are honored to have a player piano here at our speakeasy that once belonged to the Al Capone estate in Jupiter, Florida! Mr. Capone’s favorite cocktail was called the South Side Fizz, and so in honor of that we created our own riff using our Reserve Gin as a base, shaken with fresh lemon, house mint syrup, black walnut bitters, an egg white, and a splash of Fever Tree club soda.
Notes: Balanced sour & sweet, fresh, earthy, complex
Boulevardier - $15 - $11
Created in Paris around 1927 by Erskine Gwynne (writer, socialite and nephew of Alfred Vanderbilt) and built as a riff on the Italian aperitivo cocktail the Negroni, the sweet mellow tone of our corn mash Burke Bourbon balances out nicely against the rich herbal notes of Cocchi di Torino vermouth and the bitter botanical blend of Campari. Stirred with ice until temperate with an expressed orange peel.
Notes: Warm, rich, bitter, herbal, spirit forward
The Blue Pearl- $12 - $8
Sail the seven seas of tropical flavor with this riff on a pina colada and one of our oldest drink creations from the Distillery tasting room! Using Pirate Dan’s Vermont Rum as a neutral base and blue curaçao for its signature blue hue, this tiki style cocktail is bursting with flavors of pineapple, orange, coconut, and lime.
Notes: Tropical, sweet, tangy
Ah the Sazerac- debatably the oldest cocktail in America, the official cocktail of New Orleans, traditionally made with Brandy but as of the last century made with Rye whiskey. What isn’t debatable is that this close cousin of the Old Fashioned is delicious and a great way to highlight our Willoughby Whiskey Straight Rye! Stirred over ice with sugar, Peychaud’s Bitters, and a misting of Absinthe- garnished with an expressed lemon peel.
Notes: Spirit forward, dry, spiced notes, touch of sugar
